Pumpkin Cake
This is a recipe that all Pumpkin lovers will enjoy, it makes one 20cm Pumpkin Cake. What you will need:
2 eggs
1/2 a cup of softened butter
1 cup of grated peeled pumpkin
1/2 a cup of raw sugar
1 tablespoon of honey
2 teaspoons of cinnamon
1/2 teaspoon bicarbonate of soda
1/2 a cup of chopped pumpkin seeds
1 1/4 cups of millet flour
A pinch of salt
Putting it together: 1. Preheat your oven to 160c and grease a 20cm cake tin, you could use a small loaf tin if you wanted to instead.
2. Cream the sugar and butter in a large bowl and add in your eggs.
3. Add in all the other ingredients and mix well.
4. Pour the mixture into your prepared cake tin and bake for about 50 minutes.
5. Remove, allow to cool and serve covered with chopped pumpkin seeds. |
