Jubilee Cake
This will make one 20cm x 10cm Jubilee Cake that is great for a Sunday picnic or just a snack in general. What you will need: 2 rounded tablespoons of butter 1 tablespoon of sugar 2 cups of mixed fruit 2 eggs 260ml of milk 1 cup rice flour 1 cup barley flour 3 teaspoons baking powder Putting it together: 1. Preheat your oven to 175c and grease a 20cm x 10cm loaf tin. 2. Sift the flours and baking powder, then rub the butter into the flours and add the rest of the dry ingredients. 3. Lightly beat the eggs and mill then add them to the mixture. 4. Pour your mixture into your prepared loaf tin and bake for 50-60 minutes. 5. Remove and allow to cool then enjoy! |
